Recipe: Baked Oat Bars

I’m a big fan of easy snacks that I can make in advance and these are a great, super easy option. Plus, they’re delicious!

Prep time: 5 minutes

Cook time: 25 minutes

Serves: Makes 12 bars

Ingredients

2 cups quick oats

1 cup oat flour (just blitz a cup of oats in the blender until finely ground)

2 eggs

2 ripe bananas, mashed

1/2 cup dates, chopped

1/2 cup milk of choice

1/2 tsp cinnamon powder

1/2 tsp baking powder

Instructions

  1. Preheat the oven to 180C.

  2. Combine all ingredients in a large bowl and mix together into a thick batter.

  3. Spread the batter evenly onto a square baking dish lined with baking paper.

  4. Bake for around 25 minutes, until golden on top.

  5. Allow to cool fully before slicing into bars.

Store in an airtight container in the pantry for up to 5 days or in the freezer for up to 2 months.
